Gathered from a changing variety of Danish spring and summer flowers. Pale in colour and delicately floral, with a mild, versatile flavour.

Late-summer honey

Deeper colour · Rich aroma · Softly set

Gathered in late summer, often from white clover, linden blossom, fireweed and heather. Richly aromatic and deeper in colour, with a texture that may become more firmly set.

Forest honey

Pale to dark · Mellow to robust · Sometimes fluid

A honeydew honey gathered in Danish woodland rather than from flower nectar. Its character varies naturally by harvest, from pale and fluid to darker and more robust.
