Flowering, weather and coastal conditions leave their mark on every year's heather honey.
Heather generally reaches full bloom in late summer, between August and September. Exactly when the flowers open, peak and fade depends on the year's temperature, wind and rainfall.
The beekeepers move their hives in step with that year's bloom, and the honey is harvested when the flowers—and the weather—allow. Calm, dry days give the bees more time to forage, while wind and rain can affect both the bloom and the yield.
